Alternative BLT. . . .

Although the BLT is in theory a reasonably healthy healthy quick recipe, it is unfortunately most often associated with fast food restaurants. It is therefore likely in such establishments that the lettuce will be limp and withered, the bacon will have been cremated in animal fat and the bun will be full of salt, sugar and a whole host of artificial preservatives. I came up with and have often enjoyed this simple yet healthier variation on the theme.

Ingredients

2 soft, fresh bread rolls

4 lean rashers of unsmoked bacon

4 crisp Baby Gem lettuce leaves

1 large tomato (thinly sliced)

1 small spring onion, scallion in US (thinly sliced)

1 large clove of garlic (crushed)

4 basil leaves (torn in to small pieces)

1 oz of olive oil based butter alternative

Freshly ground black pepper

Method

In a small dish, combine the olive oil spread, the garlic and black pepper to taste. Put the bacon on to cook under a hot grill. Slice the rolls in half horizontally and divide the spread mixture between the four halves. Add two lettuce leaves to the bottom of each roll, followed by two slices of the cooked bacon, half of the chopped spring onion, two or three tomato slices and a couple of torn basil leaves. Replace the tops and serve immediately.
